Description

Mini. Chocolate Chip. Pumpkin. Muffins. I can’t think of anything else to say. These are EXCELLENT; the kids love them!

Ingredients

  • 1-¾ cup Flour
  • ½ cups White Sugar
  • ½ cups Brown Sugar, Packed
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoons Ground Ginger
  • ½ teaspoons Ground Nutmeg
  • 1 pinch Ground Cloves (optional)
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Baking Powder
  • ½ teaspoons Salt
  • 2 whole Eggs
  • 2 teaspoons Vanilla
  • ½ cups Butter, Melted
  • 1 cup Canned Pumpkin Puree
  • ½ cups Mini Semi-sweet Chocolate Chips

Preparation

Preheat oven to 350 degrees. Grease mini muffin pans.

In a medium bowl, sift the dry ingredients.

In another bowl, whisk eggs, vanilla and melted butter until well blended; mix in pumpkin puree until combined.

Mix in the dry ingredients to the pumpkin mixture until blended. Stir in chocolate chips.

Spoon batter into muffin tins, filling about 3/4 full. Bake for about 10 minutes or until muffins test done.

Makes 48 to 50 mini muffins.
