Description

Oh, how we love our pecan pie muffins … But have you ever added up the calories in all that butter, pecans, and brown sugar? One (8 muffin) batch packs a whopping 2,959 calories, making one muffin 370 calories and 25 grams of fat. My version knocks 100 calories off and lowers the fat to 17 grams.

Ingredients

  • ⅓ cups Butter, Melted And Cooled
  • 1 cup Pecan Halves
  • ¼ cups White Whole Wheat Flour
  • ¼ cups White Unbleached Flour
  • ⅔ cups Packed Brown Sugar
  • 2 whole Medium Eggs
  • ⅓ cups Unsweetened Applesauce
  • 1 teaspoon Pure Vanilla Extract

Preparation

Preheat oven to 375 F.

Melt the butter in the microwave or in a saucepan over low heat. Once melted, remove it from the heat and allow it to cool while you start with the next steps.

Chop pecans and mix them with the flours and sugar in a medium bowl. Set aside.

In a medium sized bowl, beat eggs with a fork. Add applesauce, vanilla and cooled, melted butter and mix well. Add the wet ingredients into the dry ingredients and mix well.

A non-stick pan needs no greasing, but use cupcake papers or grease a regular muffin tin well before dividing batter into 8 spaces. Fill each liner about 2/3 full. Bake in preheated oven at 375 F for 20 minutes.
