Description

Why should the simple pleasure of a pot of tea and freshly baked scones be only a rare indulgence? Enjoy this delightful treat more often with a quick and easy recipe that eliminates much of the butter, sugar and cream while still maintaining the delicious flavor.

Ingredients

  • 2 cups All-purpose Flour
  • ⅓ cups Splenda Or Other Artificial Sweetner
  • ¼ teaspoons Salt
  • 1 Tablespoon Baking Powder
  • 4 Tablespoons Light Butter
  • 1 cup Low Fat Or Fat Free Milk
  • 1 Tablespoon Vanilla Extract
  • 1 teaspoon Almond Extract
  • ⅓ cups Sliced Almonds Plus A Small Handful For Sprinkling On Top
  • 1 Tablespoon Granulated Or Raw Sugar

Preparation

Combine the flour, Splenda, salt and baking powder in a medium sized bowl. Add the butter and cut in with a pastry blender or fork until the mixture resembles coarse crumbs. Add the milk, vanilla and almond extract and stir to combine. Add the 1/3 cup of sliced almonds and stir in.

Spoon the mixture onto a baking sheet that has been lined with parchment paper. You can use any size ladle or scoop you like. Spray the tops of the scones with cooking spray, sprinkle on the remaining almonds and the sugar. This recipe will make approximately 6 large or 12 small scones.

Bake in a preheated 350ºF oven for 15-20 minutes depending on the size of the scones.
