Description

A light and easy version of a classic! Use shredded coconut and lemon or orange zest to give it a fresh twist!

Ingredients

  • 1-¾ cup Flour
  • ½ teaspoons Salt
  • ½ teaspoons Baking Soda
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • ⅓ cups Coconut Oil
  • ½ cups Brown Sugar
  • ½ cups Unsweetened Applesauce
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 1-½ cup Shredded Zucchini, Unpeeled
  • ½ cups Sweetened Shredded Coconut
  • 1  Lemon Or Small Orange, Zest

Preparation

Preheat oven to 350ºF and spray a loaf pan with nonstick cooking spray.

In a medium bowl, combine flour, salt, baking soda, cinnamon, and nutmeg.

In a large bowl, beat coconut oil and brown sugar. Add unsweetened applesauce, eggs, and vanilla and beat until smooth. Beat in flour mixture and mix until just combined. Stir in zucchini, coconut, and zest.

Pour batter into prepared loaf pan and bake for 55-60 minutes or until a toothpick inserted in the middle comes out clean.
