Description

A lovely light biscuit (cookie) combining lemon and honey with coconut. Win appreciation from your SO or treat him/her when they’re sick.

Ingredients

  • 4 ounces, weight Butter
  • ½ cups (less 1 Tablespoon) Sugar
  • 1 whole Egg
  • ⅓ cups Honey
  • 2 cups Plain Or All Purpose Flour
  • ½ teaspoons Salt
  • 1 teaspoon Baking Powder
  • 1 teaspoon Lemon Rind (~ From 1 Lemon)
  • 2 cups Desiccated Or Shredded Coconut

Preparation

Preheat oven to 190 C/375 F.
Cream butter and sugar with an electric beater.
Add egg and honey to the butter-sugar mixture, beat in.
Sift dry ingredients and mix in lemon rind.
Add to the butter mixture and blend well.
Roughly shape into balls (mixture should be very dry).
Press into the coconut in a bowl, flattening balls slightly in the process.
Bake for 15-20 minutes.

It may have been me, not you. I’m not sure if the original recipe I modified was meant to be dry, that’s just how mine turned out. Glad you liked them!

Tasty. When I made this, the dough was anything but very dry. Not sure what I did wrong. Anyone else have this problem?
