Description

The best banana muffins you will ever eat. That’s all.

Ingredients

  • 1 stick Butter, Melted
  • 1 cup Sugar
  • 3 Tablespoons Buttermilk
  • 2 whole Eggs
  • 1 teaspoon Baking Soda
  • 3 whole Ripe Bananas, Mashed
  • 1 cup Whole Wheat Flour
  • 1 cup Rolled Oats
  • FOR THE ADD-INS (OPTIONAL BUT HIGHLY RECOMMENDED):
  • ½ cups Raisins
  • ½ cups Roughly Chopped Pecans
  • ½ cups Chocolate Chips

Preparation

Preheat oven to 325ºF. Grease and flour loaf pans or muffin tins, or use muffin liners; set aside.

In a large bowl, whisk together butter and sugar. Add in buttermilk, eggs, and baking soda, whisking until light yellow and thoroughly combined. Follow by whisking in the mashed bananas. Stir in flour and oatmeal until just combined and fold in any add-ins.

Pour batter into prepared baking vessel and bake for 1 hour for a loaf, or 25-30 minutes for muffins. Bread/muffins are done when a toothpick inserted into the center comes out clean.

Allow to cool slightly before removing muffins from tin; allow a loaf to cool completely before removing from the pan (unless you want a big ol’ mess on your hands).

I subbed 1/2 brown sugar for this recipe and found these a bit too sweet- not sure if it was the sugar quantity or the brown sub but if I make these again I will use only 3/4 cup white sugar. I also think this recipe would work better as 12 muffins instead of 18- with 18 the muffins just came to the top of the muffin pockets in a normal size pan and didn’t form nice domed muffin tops.

These were fantastic! Thankfully, they froze very well, which helped keep us from eating all of them in one sitting.
