Description

In time for St. Patty’s Day, here is a recipe to go with our Corned Beef Soup. This recipe was given to me by a sweet, older man who drove my school bus. His Irish wife often sent him with fresh baked bread that he would share with us. One day he gave me the recipe so I could make some myself. God bless you, Mrs. Wolfe!

Ingredients

  • 4-½ cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 Tablespoons Butter, Softened
  • 2 cups Buttermilk
  • 1 cup Raisins

Preparation

Mix dry ingredients. Rub in butter with your fingers or a pastry blender. Stir in buttermilk and add raisins. Knead about 10 turns.

Place on a greased baking sheet. Form into a flat, round cake. Cut a cross on top.

Bake at 375ºF for 50–60 minutes.

This gets 5 stars for being a very authentic and easy recipe. The taste is more like 4 stars, but excellent with butter and dipped in a hot cup of tea. I took it to work for St. Patrick’s Day and everyone devoured it. I’m going to make another batch tonight and add orange zest and dried cranberries.
