We tried this after failing with the recipe on the back of the corn meal. These are excellent!

I used a gluten free flour that had xantham gum already mixed in – I think it was by Hodgson Mills.

If you use gluten free flour, do you need xantham gum to stabilize?

Finally made these for the first time. Never eaten these before. Now I understand the big fuss. They are awesome.

I used GF flour and this is exactly the texture of hush puppy I hoped for – soft on the inside with a crisp coating. – really great corn flavor. This is now my go-to for hush puppies!

Even my grandma the “cook” was impressed! The creamed corn is perfect.
