Description

I’m not normally a huge “healthy” baked goods kind of girl, but this Zucchini Bread is too good to pass up, and it’s made the healthy way. :)

Ingredients

  • 1 cup Applesauce
  • 3 whole Eggs
  • 1 cup Brown Sugar
  • ¾ cups White Sugar
  • 2 teaspoons Vanilla Extract
  • 2-½ cups Grated Zucchini
  • 3 cups Whole Wheat Flour Or Gluten Free All Purpose Flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • 2 Tablespoons Cinnamon

Preparation

Combine applesauce, eggs, sugars, vanilla and zucchini. Whisk flour, salt, baking soda, baking powder and cinnamon. Add the flour mixture to the wet mixture and mix till combined.

Pour into 2 prepared loaf pans. Sprinkle with cinnamon and sugar. Pop into a 350-degree oven for an hour.

It smelled delicious while baking, but I’m not wild about the flavor. It’s heavy and not as spicy as I’d hoped.

I just pulled the bread out of the oven and it was everything I dreamed it would be. Just sweet enough. This one is a keeper.

I was very happy with the recipe. I used spelt flour – not gluten free, but an alternative option. Turned out great – fairly dense, but not excessively so. Excellent warmed with some butter for breakfast.

This bread was great. It made two beautiful loaves that were perfectly dense and sweet. This will be my go-to zucchini bread recipe from now on.

This is really yummy! Definitely a bread I would make again, just not quite as low calorie as I was hoping.

My Kitchen-Aid mixer told me that I needed to bake some bread this past weekend, and I settled on this recipe. It was so delicious! So simple to put together, and my husband has been raving about it (and devouring it) for the past several days. It’s a very dense bread and fills us up, and it’s the perfect sweetness. Yummy!
