Description

A great snack filled with great protein and fiber. Don’t be scared by the long ingredient list these are very easy to make. A great snack to send with the kids.

Ingredients

  • 1-½ cup Raisin Paste Or Raisins (to Make Paste) See Note
  • ½ cups Canola Oil
  • ½ cups Brown Sugar
  • ½ cups Sucanat
  • ½ cups Honey
  • 1 teaspoon Vanilla
  • 1 whole Egg
  • 1 cup All-purpose Flour
  • 1 cup Whole-grain Flour
  • 1 cup Old Fashioned Rolled Oats
  • ¼ cups Almonds Or Walnuts, Chopped Finely
  • 2 Tablespoons Sunflower Seeds
  • 2 Tablespoons Poppy Seeds
  • ¼ cups Ground Flax Seed
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Salt

Preparation

Heat oven to 350 degrees F. Lightly grease a 15 X 10 inch rimmed baking sheet.

In a large bowl, mix together all of the wet ingredients (everything down to the egg).

In a separate bowl mix together all of the dry ingredients (everything else on the list). Add the dry ingredients to the wet ingredients. Mix well. Pour mixture onto prepared pan and spread it out evenly (the pan will be full). Bake for 15-17 minutes or until a cake tester comes out clean.

Cool and cut into bars. Store in an airtight container.

*You can buy raisin paste but I never have any on hand so I fill up a 2 cup measuring cup with 1 1/2 cups of raisins add boiling water to just cover the raisins. Let soak until soft and then puree this mixture.
