Description

A recipe you will love without feeling guilty, and your family will never suspect that it is a healthier recipe! Enjoy!

Ingredients

  • 2-½ cups Whole Wheat Flour
  • 2 whole Eggs
  • ⅔ cups Plain Or Vanilla Yogurt
  • ⅓ cups Canola Or Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 1-½ cup Mashed Ripe Bananas
  • 1 teaspoon Baking Soda
  • 1-¼ cup Brown Sugar

Preparation

Preheat oven to 350 degrees.

In a large mixing bowl, stir eggs, yogurt, oil, vanilla extract, bananas, baking soda and brown sugar until just combined. Slowly add the flour while mixing slowly. Pour the batter into a pre-sprayed muffin pan or loaf pan. If making muffins, bake them for 20-25 minutes or until a toothpick comes out clean. If making bread, bake for 50-60 minutes or until a toothpick comes out clean. Serve warm with soft butter! Makes approximately 15 muffins or one banana loaf.

Yumm! Made these today 8-2-10 and we love them. Very moist and delicious, even the kids ate them up. I did put choc. chips in half of them( after they were in the muffin tin I threw in about 4-6 chips on top and pushed them down a bit with a fork ), but I prefer them without. The kids like them better with the chips… Thanks for sharing this great recipe, I will be replacing my old one now.

This is one of my favorite banana muffin recipes now! I would add nuts to mine though.

I had some spare cream cheese frosting to use up, but these were so moist and chewy that they didn’t need it! Got rave reviews all around! This will be my go-to recipe for banana bread or muffins in the future. Love the healthy twist.

This recipe was delicious! The muffins were light and fluffy. I substituted half a cup of honey for half a cup of brown sugar. I also left out the extra fourth of a cup of brown sugar. It wasn’t too sweet.

This bread it light and delicious. Great for breakfast. Instead of using oil I used applesauce to make it a little healthier. I made the loaf instead of muffins and baked it for 50min. I like that this was quick and easy to make.

I made this before our week long sailing vacation as something quick, easy and healthy to have for breakfast. It’s very very good! I made the bread and topped each slice with a little butter then heated in a pan to give it a nice crust. Sooo good! Loved that it uses whole wheat flour.

It does make a very large loaf and it required cooking an extra 15 min over the posted cooking time. Still very moist tough. Next time I’m going to try using maple syrup in place of some of the brown sugar.

I rarely follow a recipe exactly, but did this one — it’s nice and moist, even with ww flour. The recipe does make about 15 good-sized muffins — don’t try to cram it into a 12-cup muffin tin.
