Description

Scrumptious spice cake topped with a sugar and spice glaze. See my blog post for more pictures and read my ramblings on this deliciousness!

Ingredients

  • FOR THE CAKE:
  • 1-¾ cup White Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • ½ teaspoons Ground Nutmeg
  • ½ teaspoons Ground Ginger
  • ¼ teaspoons Ground Cloves
  • ¼ cups Butter, Melted
  • ¼ cups Unsweetened Applesauce
  • 2 whole Eggs
  • 1 cup Sugar
  • ¾ cups Canned Pumpkin Puree
  • ¾ cups Chocolate Chips (optional)
  • ¾ cups Chopped Walnuts (optional)
  • FOR THE SUGAR SPICE GLAZE:
  • ½ cups Powdered Sugar
  • ⅛ teaspoons Nutmeg
  • ⅛ teaspoons Cinnamon
  • 1-½ teaspoon Milk - More Or Less Depending On Desired Consistency

Preparation

Preheat oven to 350 F. Grease a 9×5-inch loaf pan and set aside.

For the cake:
Combine dry ingredients in a large bowl (flour through cloves). Set aside. In another bowl, combine melted butter, applesauce, eggs, sugar and pumpkin. Mix wet and dry ingredients together and then fold in chocolate chips and/or chopped walnuts (if using).

Pour batter into prepared loaf pan, smooth the top and bake for 65 minutes, or until a knife inserted into the center comes out clean.

For the glaze:
While the bread is baking, make the glaze by combining sugar and spices in a small bowl and adding milk 1 teaspoon at a time until you achieve desired consistency. Pour the glaze on top of your bread after it has had a chance to cool a bit.
