  • 1 teaspoon Salt
  • Fresh Ground Black Pepper To Taste
  • 1 cup Milk

  • ¼ cups Vegetable Oil
  • 1 cup Ham, Diced
  • 1 cup Cheddar Cheese, Shredded
  • ¾ cups Scallions, Sliced

In a large mixing bowl, combine flour, baking powder, salt and black pepper. Stir to combine.

Add milk, eggs and vegetable oil. Mix just until combined.

Add ham, cheese and scallions. Mix just until combined. Do not over stir.

I just tried out these muffins this morning. I served them with some scrambled eggs and they got rave reviews from the family. In addition they were incredibly easy and was a great way to use up some left over ham.
