Description

You want real donuts? You gotta fry ‘em up. Here’s a quick and easy recipe for homemade dough.

Ingredients

  • FOR THE DONUTS:
  • 3 cups Oil, For Frying (I Use Canola)
  • 1 cup Plus 2 Tablespoons Flour
  • 1 teaspoon Baking Soda
  • ⅛ teaspoons Freshly Grated Nutmeg
  • ⅛ teaspoons Salt
  • 1 whole Large Egg Yolk
  • ¼ cups Sugar
  • ½ Tablespoons Unsalted Butter, melted
  • ¼ teaspoons Vanilla
  • ¼ cups Milk
  • FOR THE GLAZE:
  • ½ cups Powdered Sugar
  • ¼ teaspoons Vanilla (or Rum)
  • 1 Tablespoon Milk (or More As Needed To Reach Desired Glaze Consistency)

Preparation

In a large skillet with high sides, heat 1″ of clean oil to 370 F.

Meanwhile, in a large bowl sift together the flour, baking soda, nutmeg and salt. In a small bowl, whisk together the egg yolk, sugar, melted butter, vanilla extract and milk. Add the wet ingredients to the dry and fold together until no streaks of flour remain, but try not to over-mix the dough.

Roll out the dough on a floured surface with a rolling pin to about 1/4″ thickness. Use a 3″ biscuit cutter to cut out 6 circles. Use a smaller cutter (I use a piping tip) to cut out the middles.

Once the oil is hot, carefully slide 3 donuts into the oil. Fry for 15-20 seconds, then flip them over. Fry the other side for 15 seconds (or until golden brown) and then remove donuts from the oil. Let them rest on a paper-towel lined cooling rack so the excess oil drips away. Repeat with the remaining donuts and donut holes.

While donuts are cooling, whisk together all the glaze ingredients. Dip donuts in glaze, then serve.
