Description

Sweet honey corn bread baked in a loaf for easy “grilling,” creating the perfect texture!

Ingredients

  • 1 cup All-purpose Flour
  • 1 cup Yellow Cornmeal
  • 2 Tablespoons Sugar
  • ¼ teaspoons Salt
  • 3 teaspoons Baking Powder
  • 2  Eggs
  • 1 cup Milk
  • ¼ cups Canola Oil
  • ¼ cups Pure Honey
  • 2 Tablespoons Pure Honey
  • Spray Butter For Grilling

Preparation

Preheat oven to 350 degrees F. Spray a glass loaf dish with Baker’s Joy (or similar non-stick spray) and set aside.

In a large bowl, whisk the flour, cornmeal, sugar, salt and baking powder together. Set aside.

In a small bowl, beat the eggs, then add the milk, oil and honey (1/4 Cup plus the 2 Tablespoons) and mix together. Pour into a large bowl and combine wet and dry ingredients until just moistened.

Pour batter into the prepared dish and bake for 40-45 minutes, or until a toothpick comes out clean. Cool in baking dish on cooling rack for about 5 minutes, then cool on its side for about 5 minutes.

Once the bread is cooled, slice it with a serrated knife and heat a skillet or griddle. Spray cornbread with spray butter or carefully spread butter on slices. Cook in skillet over medium heat for a few minutes on each side until nicely browned.
