Description

When I was working in the health and wellness field, a co-worker of mine would bring this Grape-Nuts Bread to work. A sweet, nutty bread packed with fiber and protein. We make this frequently in our house; both my husband and kiddos approve.

Ingredients

  • 1 cup Grape Nuts Cereal
  • 2 cups Buttermilk
  • 2 cups Sugar
  • 2  Eggs
  • 3-½ cups Flour
  • ½ teaspoons Salt
  • 1 teaspoon Baking Soda
  • 2 teaspoons Baking Powder

Preparation

Combine buttermilk and Grape-Nuts in a bowl. Allow to soak for 10 minutes. Preheat oven to 350 F.

Beat sugar and eggs together in a large bowl. Add the soaked Grape-Nuts mixture and mix to combine.

Sift flour, salt, baking soda and baking powder together in a smaller bowl then stir thoroughly into the Grape-Nuts mixture.

Pour into 2 greased and floured standard size loaf pans. Bake at 350 F for 45 minutes or until a toothpick inserted in the center comes out clean. Remove from oven. Cool and serve!

A different kind of quick bread that we have enjoyed several times now. I cut back on the sugar a little just to make it a tad healthier.
