Preheat your oven to 350ºF. Grease a 9-inch loaf pan with cooking spray.
In a medium saucepan over low to medium heat, mix the brown sugar, butter and syrup until the butter is melted and it is well blended, about 5 minutes. Set aside and allow to cool slightly.
In a medium bowl, combine the flour, salt, baking power and ginger. Add the egg and milk and beat with a wooden spoon or mixer until blended. Add the cooled melted brown sugar mixture to the flour mixture and blend everything together.
Pour the mixture in a prepard loaf pan and place in the middle of the oven. Bake for 30-40 minutes or until a toothpick inserted in the middle of the loaf comes out clean. Remove the bread from the pan and allow to cool on a wire rack.
