1. In a large bowl, beat honey, oil, eggs, and yogurt until smooth. Add baking powder, baking soda, nutmeg, salt and 2 cups flour. Stir to combine. Add remaining flour and stir.
2. Combine apples, cinnamon, and pecans in a small bowl. Set aside.
3. Drop batter by heaping tablespoons in greased muffin tins. Drop apple filling by heaping teaspoons over batter. Top with 1 tablespoon batter and smooth over filling with a spoon. Sprinkle with additional cinnamon if desired.
4. Bake at 375ºF for 25-30 minutes or until a toothpick inserted in the middle comes out clean. Allow to cool 15 minutes before serving. Muffins can be stored in an airtight container for 1-2 days.
Yields 2 dozen muffins.
