Description

Finally, a gluten-free banana bread recipe that is blow-your-mind delicious!

Ingredients

  • 4 whole Large Eggs, Room Temperature
  • 3 whole Bananas, Large Or Over Ripened, Mashed
  • ¼ cups Honey
  • ¼ cups Whole Milk
  • 1 Tablespoon Vanilla Extract
  • 2 cups Gluten Free Flour Mix
  • ¼ cups Almond Flour
  • 2 teaspoons Baking Soda
  • 1 Tablespoon Ground Flax Seed (optional But Adds Nutrition)
  • ¼ cups Walnuts, Chopped (optional)
  • ½ Tablespoons Sea Salt
  • ½ teaspoons Cinnamon

Preparation

Preheat oven to 350ºF. Grease and flour (use gluten-free flour) a loaf pan. Set aside.

Combine the wet ingredients in a small bowl and whisk. Combine the dry ingredients (including the nuts) in another bowl and whisk to combine. Add the wet ingredients to the dry and combine.

Pour into the loaf pan and bake 40–50 minutes, checking every 5 minutes after the 40-minute mark until an inserted knife comes out clean.

this was delicious, however when i stirred the ingredients together it was wayy too dry so i had to dump in lots of milk at the last minute and it made tons, next time i’ll decrease the flour by a lot. i also had some dried up figs i had soaked overnight in milk that i chopped and added and some unsweetened flaked coconut (i used mostly coconut flour), added some vinegar to help with the raising, and skipped adding honey. it was good enough to make again–soon!
