Description

Do you crave bread but are on a gluten-free diet? If you like cheese too, this is made just for you!

Ingredients

  • 1 cup Buckwheat Flour
  • ¾ cups Almond Flour
  • ⅓ cups Chia Seed, Ground
  • ⅓ cups Butter, At Room Temperature
  • 1 Tablespoon Baking Powder
  • 1 ounce, weight Cheese Of Your Choice, Diced
  • ¼ teaspoons Salt
  • 1 whole Egg
  • ½ cups Plain Yogurt
  • Additional Sliced Cheese, For Topping (optional)

Preparation

Add buckwheat flour, almond flour and grinded chia seed into a mixing bowl. Mix well.

Slice the room temperature butter before adding into the mixing bowl. Add baking powder, cheese, salt, egg and yogurt then mix until well-combined.

Line a loaf pan with parchment paper or grease all sides with butter. Transfer batter into loaf pan.

Preheat oven to 356ºF (180ºC). Pour batter into the loaf pan. If desired, layer some slices of cheese on top of it.

Bake bread for half an hour. Insert toothpick into bread: if it comes out dry, bread is ready; if it comes out sticky, bake for another 10 minutes or so. (It depends on your oven.)

Slice bread and spread butter on top. Enjoy!

Note: Lately I’ve been having an obsession with cilantro, so I chop a handful of cilantro leaves and whisk it with butter and a pinch of salt.
