Gingerbread Loaf with Frosting

Description

This is a “knock-off” of a Starbucks gingerbread loaf and it is delicious. Also, who doesn’t love frosting? Give it a whirl. I just know you will love it.

Ingredients

  • FOR THE LOAF:
  • ½ cups Unsalted Butter
  • 1 cup Granulated Sugar
  • 1 teaspoon Orange Extract
  • 1-½ cup Flour
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Ground Cloves
  • 2-¼ teaspoons Ground Ginger
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Unsweetened Applesauce
  • FOR THE FROSTING:
  • 8 ounces, weight Cream Cheese
  • 1 teaspoon Vanilla Extract
  • ½ teaspoons Orange Extract
  • 2-½ cups Confectioners Sugar

Preparation

Preheat oven to 350ºF. Spray a loaf pan or pans with nonstick cooking spray. (I used 3 mini pans.)

Cream the butter, sugar, and orange extract. Add in flour, cinnamon, cloves, ginger, baking soda, and salt and mix until just combined. Stir in applesauce. Distribute the mixture between the baking pans.

Bake for about 40 minutes or until an inserted wooden toothpick comes out clean.

In the meantime, for the frosting, in a separate bowl cream the cream cheese. When the cheese is fluffy, add in vanilla and orange extracts. Mix confectioner’s sugar until light and fluffy.

Note: This makes a lot of frosting and I actually doubled the loaf recipe and made 6 loaves and 1 frosting serving. Each loaf still had ample frosting per loaf.

Since it’s not quite gingerbread season… but I have loads of applesauce on-hand, have you had success freezing the unfrosted loaves?

I made a single recipe of the last night, as directed. However I used the “1/3 less fat” cream cheese for the icing (and used half the amount) and it took a lot more powdered sugar to get the consistency to turn out right. The end result was scrumptious! Very moist and gingery; I will definitely make this again. I love that it called for ingredients I typically have on-hand.
