Description

My mother (Eleanor) was an amazing cook and baker. This banana bread was one of her favorite recipes. She would serve it warm from the oven with sweet whipped butter, and drizzle it with honey. A slice of heaven. I hope you like it too. ;)

Ingredients

  • 1-¾ cup All Purpose Flour, Sifted
  • ¼ teaspoons Baking Soda
  • 1-¼ teaspoon Cream Of Tartar
  • ½ teaspoons Salt
  • ⅓ cups Shortening
  • ⅔ cups Sugar
  • 2 whole Eggs, Well Beaten
  • 1 cup Ripe Bananas, Mashed (2 To 3 Bananas)
  • ½ cups Chopped Nuts (walnuts, Pecans) Optional

Preparation

Preheat your oven to 350 degrees. Grease your loaf pan with shortening or cooking spray.

Sift the flour, baking soda, cream of tartar, and salt together 3 times.

In a bowl, rub the shortening to a creamy consistency with the back of a wooden spoon. Stir the sugar a few tablespoons at a time into the shortening and continue stirring after each addition until light and fluffy.

Add eggs and beat well. Add flour mixture, alternately with banana, a small amount at a time. Beat after each addition until smooth. If using nuts add them to the batter now.

Pour into a loaf pan and bake at 350 degrees for 1 hour. It’s done when you test it with a wooden toothpick and it comes out clean. Just poke the banana bread with the toothpick. Go ahead, it won’t bite. :)

Cool on cooling rack for 10 minutes. You can slice it as thick or thin as you like. Enjoy!
