Description

This recipe comes from my niece. She entered it in a 4-H food show and if I remember correctly, she made it all the way to the state finals. I could eat an entire loaf of this treat!

Ingredients

  • 3 whole Eggs
  • 1 cup Vegetable Oil
  • 1 teaspoon Vanilla
  • 3 cups Sugar, Divided
  • 2 cups Whole Wheat Flour
  • 1 cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • 1 teaspoon Salt
  • ¾ teaspoons Pumpkin Pie Spice
  • ¼ teaspoons Cinnamon
  • 1 cup Grated Zucchini
  • ½ cups Grated Carrot
  • ½ cups Mashed Bananas
  • ½ cups Chopped Pecans
  • 1 cup Water
  • 2 Tablespoons Butter
  • 1 teaspoon Rum Flavoring

Preparation

Combine eggs, oil, vanilla and 2 cups of the sugar in a bowl. Add sifted dry ingredients, mixing well. Stir in zucchini, carrots, bananas and pecans. Pour into 2 greased and floured loaf pans. Bake at 375 degrees for one hour.

Combine the remaining cup of sugar with one cup of water in a saucepan. Boil for five minutes. Stir in butter and rum flavoring. Remove bread from the oven and poke holes over the top of the loaf using a toothpick or a fork. Spoon syrup mixture over the loaves while they are still in the pans. Allow syrup to absorb into loaves. Remove loaves from pans. Slice and enjoy!
