Description

A high protein, chocolaty banana bread. No added sugar and perfect for a post workout snack.

Ingredients

  • ¾ cups Oat Flour
  • ½ cups Spelt Flour
  • ½ cups Almond Flour
  • 2 Tablespoons Dark Unsweetened Cocoa Powder
  • ¼ cups (heaping) Chocolate Whey Protein Powder
  • ¼ teaspoons Salt
  • 1-½ teaspoon Baking Powder
  • 1-½ whole Large Bananas, Peels Removed Then Mashed
  • 1 whole Egg
  • ¼ cups Liquid Egg Whites
  • ½ cups Plain Greek Yogurt
  • ¼ cups Unsweetened Applesauce
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Dark Chocolate Chips

Preparation

Preheat oven to 350 F and grease a standard-sized loaf pan. Set aside.

Combine flours, cocoa powder, protein powder, salt and baking powder in a large bowl and mix together. Set aside.

Mash bananas in a medium bowl. Add egg, egg whites, yogurt, applesauce and vanilla extract and whisk together.

Pour wet ingredients into dry and stir together.

Fold in chocolate chips and pour batter into bread pan.

Bake for 35-40 minutes or until a toothpick comes out clean. Remove bread from the oven and let it cool for 5 minutes in the pan. Then remove bread from the pan and transfer to a cooling rack.

Notes:
– There’s no added sugar in this bread. If you want it on the sweeter side, feel free to add maple syrup, agave, honey or sweetener of choice. I prefer it as a healthy snack and without the added sweetness.
– You can also substitute whole wheat pastry flour or regular all purpose flour for the spelt.
