Description

When I was a child I brought home a school library book with this recipe in the back. Mom and I made it and it was so good it’s become a family tradition. I can’t let a single Christmas go by without making a couple loaves or batches of muffins or mini-muffins, etc. It’s sweet. It’s tart. It’s chewy. It’s yummy.

Ingredients

  • 2 cups Sifted Flour
  • 1 cup Sugar
  • 1 teaspoon Orange Zest
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • 1 teaspoon Salt
  • ¼ cups Butter, Room Temperature
  • ¾ cups Orange Juice
  • 1 whole Egg, Beaten
  • 1-½ cup Golden Raisins, Chopped
  • 1-½ cup Cranberries, Cut In Quarters
  • ½ cups Pecans, Finely Chopped (OPTIONAL)

Preparation

Mix flour, sugar, orange zest, baking powder, baking soda and salt. Cut in butter, then mix in juice and egg then stir just until moistened. Fold in raisins, cranberries and optional pecans. Spread in a greased loaf pan. Bake about 1 hour then check for doneness. Add another 15 or so minutes if a toothpick inserted near the center is not coming out clean.

Optional: Spoon into muffin tins and bake about 12 minutes or until done. For parties, I make miniature muffins, too. Those only bake about 8 minutes.
