Description

The best muffins I ever made: moist, crunchy, tangy and sweet … coconut and kiwi are a muffin bliss.

Ingredients

  • 1 cup Shredded Coconut
  • 2 whole Kiwis
  • 2 cups All-purpose Flour
  • ¾ cups Granulated Sugar
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • 1 teaspoon Salt
  • 4 Tablespoons Butter
  • 1 whole Large Egg
  • 2 whole Egg Whites
  • ½ cups Milk
  • 3 Tablespoons Honey
  • 1 teaspoon Vanilla Extract

Preparation

Preheat oven to 375 F.

Peel and dice the kiwis and set aside. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, mix the butter with the eggs and add the milk, honey and vanilla extract. Add to the flour mixture, and stir quickly until well combined. Don’t overmix! You need to mix just well enough so things are combined. Add the shredded coconut and kiwis and mix with a spatula. Spoon the batter evenly into 12 muffin molds. Bake until a toothpick comes out clean (about 20 minutes).

I love these muffins. They are not to sweet, because the kiwi is a little tart. I will be making two dozen next time, one was just not enough.

Perfect muffin base! I will be using the basic recipe for all of my muffins. I love the combination of sweet coconut and tart kiwi. Delicious!!

These muffins are pretty tasty! I only added the whole eggs (leaving the whites out) and the texture was still quite nice. I also left out the honey fearing they would be too sweet. They were just right for my tastebuds. The combination of kiwi and coconut is so good. Thanks for sharing the recipe…I’ll be adding this one to my muffin recipe go-to list!
