Description

Cozy up for fall this year and celebrate the season with this easy cinnamon pecan streusel pumpkin bread recipe.

Ingredients

  • FOR THE STREUSEL:
  • ⅔ cups Flour
  • ¼ cups Brown Sugar
  • 1 teaspoon Cinnamon
  • ¼ cups Chopped Walnuts Or Pecans
  • ¼ cups Cold Butter
  • FOR THE PUMPKIN BREAD:
  • 2-¼ cups All-purpose Flour
  • 1 Tablespoon Pumpkin Pie Spice
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 2  Large Eggs
  • 1-½ cup White Sugar
  • 1 can (15 Oz. Size) Pumpkin
  • ½ cups Melted Butter

Preparation

For the streusel:
Stir flour, brown sugar, cinnamon and chopped nuts in a medium bowl. Add butter and crumble into the dry ingredients with your fingertips until there are no more flecks of dry flour and small crumbs form. Cover and refrigerate.

For the pumpkin bread:
Preheat oven to 350°F. Grease and line two 9×5 inch loaf pans.

Stir flour, pumpkin pie spice, baking powder and salt in a large mixing bowl and set aside.

Whisk eggs, sugar, pumpkin and melted butter together in a measuring jug. Pour wet ingredients into dry ingredients and fold in just until combined. Do not overmix!

Spoon batter into prepared loaf tins and evenly sprinkle with chilled streusel. Bake at 350°F for 40–45 minutes, or until a toothpick inserted into the middle comes out clean.

Cool in the pans for 10 minutes before removing the breads onto a wire rack to cool completely.

yah mine didn’t look like this, didn’t get that big. I make a LOT of bread and don’t have trouble with my oven, but I had to bake these loaves an hour and 15 minutes and it still has a ribbon of heaviness (not baked) in the middle. I like the streusel and might make my regular pumpkin bread recipe but use the streusel from this recipe. Prolly won’t make this bread again.
