Description

Chocolate, peanut butter, and bananas come together to make this whole wheat snack bread.

Ingredients

  • 2 cups Whole Wheat Pastry Flour (or All-purpose)
  • 1-¼ Tablespoon Baking Powder
  • ⅓ cups Cocoa Powder
  • ¼ cups Peanut Flour (this Can Be Omitted If You Don't Have Any)
  • ¼ teaspoons Cinnamon
  • ¼ Tablespoons Salt
  • ½ cups Butter, At Room Temperature
  • ½ cups Peanut Butter
  • ⅓ cups Brown Sugar
  • ¼ cups White Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla Extract
  • 4 whole Large Ripe Bananas, Mashed
  • ½ cups Milk
  • Raw Turbinado Sugar For Garnish

Preparation

Preheat oven to 350 degrees F. Combine flour, baking powder, cocoa, peanut flour, cinnamon and salt in a bowl and set aside.

Cream butter and peanut butter in the bowl of an electric mixer. Add sugars and beat until fluffy, about 3 minutes. Add egg and vanilla, mixing until combined. Add bananas and mix. Add dry ingredients slowly into the creamed mixture, mixing until just combined. Stir in milk, adding additional amounts one tablespoon at a time if batter is not wet enough.

Spray a loaf pan with non-stick spray and pour in the batter. Cover the top with coarse sugar for garnish. Bake for 50 minutes, or until knife inserted comes out clean.

wooohooo~~your on the front page again!!!! way to go~~guurl!!!! i am gonna have to say~~~i have noticed this banana and choc thing~~have always thought it was gonna be gross–however–you have gone and put PB in it so you have made me wanna make this…and i will!!! let ya’ know the out-come!!!!LOL!!!

I replaced half of the butter with applesauce, used only 3 bananas and used only a 1/3 cup brown sugar. The net result is delicious! (Although, without the two sugars it’s a bit more savory than most banana breads.)

Ok this is seriously the best bread EVER!! I didn’t have enough bananas so I used banana extract instead of vanilla. I also put some chopped pecans in too!! SOOO good!!!
