Description

A delicious fall favorite – perfect to enjoy when the weather starts cooling off!

Ingredients

  • 3-¾ cups All-purpose Flour
  • 1-½ teaspoon Salt
  • 1-½ teaspoon Baking Powder
  • 2-½ teaspoons Ground Cinnamon
  • 1 teaspoon Ground Nutmeg
  • 3 whole Eggs
  • 3-½ cups Sugar
  • 1-¼ cup Vegetable Oil
  • 1-½ teaspoon Vanilla Extract
  • 29 ounces, weight Canned Pumpkin
  • 12 ounces, weight Semi-sweet Chocolate Chunks

Preparation

Preheat oven to 350 degrees F.

In a mixing bowl, combine the flour, salt, baking powder, cinnamon, and nutmeg. Set aside.

In a large mixing bowl, combine the eggs, sugar, oil, vanilla, and pumpkin and mix to combine. Stir the dry ingredients into the wet ingredients. Fold in the chocolate chunks.

Transfer the mixture into greased muffin tins (or line the tins with paper liners). Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Be careful not to overbake!

Variation: The batter can also be made into pumpkin bread using 3 loaf pans or 1 bundt pan. (Increase baking time to 55-65 minutes).
