Description

Moist, and possessing deep chocolate flavor, these are the perfect accompaniment to coffee, but are fabulous for breakfast, a snack, or even dessert.

Ingredients

  • 2 whole Eggs
  • ¼ cups Canola Oil
  • 1-¼ cup Milk
  • 1 cup Granulated Sugar
  • ½ cups Cocoa Powder
  • 2-¼ cups All-purpose Flour
  • 2-½ teaspoons Baking Powder
  • 1 cup Bittersweet Chocolate Chips

Preparation

Preheat the oven to 350 F.

In a large bowl whisk together the eggs, oil, milk, and sugar. Add the cocoa powder, followed by the flour and baking powder. Fold in the chocolate chips and pour the batter into a greased jumbo muffin pan (my pan makes 6 muffins). Bake for 45 minutes, or until a cake tester inserted in the center comes out clean. Enjoy!
