Description

Super moist, soft and loaded with chocolate chips! A great way to use up zucchini from your garden!

Ingredients

  • 1-½ cup All-purpose Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 1 pinch Nutmeg
  • 1 whole Egg
  • ½ cups Canola Oil
  • ½ cups Light Brown Sugar, Packed
  • ½ cups Sugar
  • ½ cups Plain Greek Yogurt
  • 1 teaspoon Vanilla Extract
  • 1 cup Zucchini, Shredded
  • 1 cup Semi-Sweet Chocolate Chips

Preparation

Preheat oven to 350ºF. Butter and flour a 9 x 5 loaf pan and set aside.

In a large bowl, mix together flour, baking soda, baking powder, salt, cinnamon and nutmeg.

In a separate bowl, whisk together egg, oil, both sugars, Greek yogurt and vanilla extract until combined. Add the wet ingredients to the dry ingredients and fold gently. Do not over-mix. Fold in zucchini and chocolate chips.

Pour batter into the prepared pan and bake for 40–50 minutes or until a toothpick comes out clean. Remove from the oven and let cool in the pan for 20 minutes.

Take the loaf out of the pan and allow it to cool completely on a wire rack. Slice bread and serve!
