Description

These moist muffins are a household staple. I have included a pumpkin variation as well.

Ingredients

  • 1-¾ cup Whole Wheat Flour
  • 1-½ cup Milled Wheat Bran
  • ½ cups Chocolate Chips (milk, Semisweet, Dark...whatever You Like)
  • 1-½ teaspoon Baking Soda
  • 1-½ teaspoon Baking Powder
  • 1-½ cup Skim Milk (you Can Use Buttermilk If You Don't Care About The Fat Content And Like The Taste)
  • 1 cup Applesauce Or Sugar Free Apple Puree
  • 1 whole Very Ripe Banana, Mashed
  • ½ cups Raw Honey
  • 2 Tablespoons Oil
  • 2 whole Beaten Eggs

Preparation

Preheat oven to 400ºF. Combine dry ingredients (flour, wheat bran, chocolate chips, baking soda, baking powder) and set aside. In a separate bowl, add the wet ingredients (remaining ingredients) and blend until thoroughly mixed. Fold all dry ingredients into the wet mixture until just barely mixed and moistened. Fill greased or lined muffin tins and bake for 15 to 20 minutes. Makes 18 muffins.

Notes:

You can replace the chocolate chips with nuts or raisins or craisins, chopped apples, or leave them out altogether.

For a fall/winter variation, I like to substitute pumpkin puree for the applesauce, and add 1 tablespoon cinnamon, 1/8 teaspoon nutmeg, and 1/8 teaspoon ground cloves.
