Description

A gingerbread quick bread with a hint of banana and just enough chocolate!

Ingredients

  • 2-¼ cups All-purpose Flour
  • ½ teaspoons Salt
  • 1-½ teaspoon Baking Soda
  • 2 teaspoons Ginger
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Nutmeg
  • ¼ teaspoons Ground Cloves
  • ¼ cups Butter, At Room Temperature
  • ⅓ cups Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • ½ cups Molasses
  • 2 whole Medium Bananas, Mashed
  • 1 cup Buttermilk
  • 1 cup Chocolate Chips
  • 2 Tablespoons Raw, Coarse Sugar

Preparation

Preheat oven to 375 degrees.

Combine flour, salt, baking soda and spices in a bowl.

In the bowl of an electric mixer, cream butter and sugar together. Add egg and vanilla and mix until pale yellow and smooth, about 3 minutes. Stir in molasses and mashed bananas. Add half of the dry ingredients, just mixing until combined, then add buttermilk. Add remaining dry ingredients. Fold in chocolate chips.

Spray a loaf pan with non-stick spray and pour batter in. Top with raw turbinado sugar. Bake for 40-45 minutes, or until a toothpick inserted comes out clean.

I just baked this and it smells and looks delicious! Have to wait until tomorrow to eat it when we bring it to a family gathering and I can’t wait! I also had to bake it for about 53 minutes.

Right now, I wish we had “smell – o – comments” because my house smells delish! I only had 4 x 8 loaf pans so I doubled the recipe and got 3 perfect pans. This recipe is yummy!

I just made this. Realized I didn’t have banana in the midst of it and added canned pumpkin instead. It cooked for more like 55-60 minutes for a large loaf. It was great and while warm my family has about demolished it.

This stuff is delicious!! I made it with mostly whole wheat flour and cut down on the ginger a bit and it was just wonderful!! Thanks for another great recipe!

This bread was amazing. I substituted honey for the molasses and used dark chocolate chips. I had to bake it for 50 minutes but there were still some doughy places in the middle of the bread. Next time I will bake it for 55 minutes. The flavor was amazing!

This was a huge hit at our house. My kids LOVED it. I didn’t have one problem with this recipe. It turned out great. I have told I don’t know how many people about it and plan on making it again this weekend!

This was great!!! I did have to leave it baking a bit longer than the recipe called for and had to cover it at the end to keep the top from getting too done, but it still turned out very very well. I didn’t have any cloves so I used a tiny bit of orange zest (yes they aren’t anywhere near the same taste, but it was good still).

My husband doesn’t like a crunchy raw sugar top, so I sprinkled some chocolate chips on top instead – nuuummmy!
