Description

A moist quick-bread made with melted dark chocolate and sweet bananas.

Ingredients

  • 4 Tablespoons Butter, Melted
  • 2 whole Eggs
  • 1 cup Banana, Mashed
  • 1 teaspoon Vanilla Extract
  • ½ cups Sugar
  • 1 cup All-purpose Flour
  • ¾ cups Whole Wheat Pastry Flour
  • ¼ cups Unsweetened Cocoa Powder
  • ¾ teaspoons Salt
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Baking Powder
  • 1-⅜ ounces, weight Dark Chocolate, Melted According To Package Instructions, Then Cool

Preparation

Preheat the oven to 350 F. Grease 2 mini loaf pans or 2 regular sized loaf pan and set aside.

In a large bowl, combine the butter, eggs and banana. Then stir in the vanilla extract. Set aside.

In an another bowl combine sugar, flours, cocoa powder, salt, baking soda and baking powder.

Combine the wet and dry ingredients and mix until the ingredients are blended together.

Fold in the melted chocolate.

Pour the batter into the greased baking pans and bake until a toothpick inserted in the center comes out clean. Small loaves take around 30 minutes, a normal-sized loaf takes around 50 minutes.

Remove from the oven and allow to cool. After they have cooled in the pan for 5 or 10 minutes the loaves can be removed from the pan to cool. Once they are cool they can be individually wrapped and frozen.
