Description

Cheesy bread, you’re the real MVP of dinner.

Ingredients

  • 2 Tablespoons Olive Oil, Divided
  • 1 whole White Onion, Thinly Sliced
  • ½ teaspoons Sugar
  • Salt And Pepper, to taste
  • 1 whole Boneless Skinless Chicken Breast
  • 1 whole Baguette
  • ½ cups Gruyere Cheese (we Used Grand Cru)

Preparation

To start, heat 1 tablespoon of olive oil in a saute pan on medium high heat until oil is shimmering. Add onions and spread out evenly over pan to begin caramelization process. Allow to cook for 10 minutes, stirring occasionally, then add sugar. Toss onions to coat, and allow to brown and caramelize for 35–40 minutes longer. Be sure to scrape bottom of pan to prevent onions from sticking. Remove from heat and set aside.

While onions are caramelizing, cook chicken. Sprinkle salt and pepper on both sides and grill on a grill pan for 4–5 minutes on each side or until chicken is cooked through and no longer pink in center.

Preheat oven to 425ºF, and line a baking sheet with tinfoil. Slice open baguette and pour on 1/2 tablespoon olive oil on each side, then sprinkle with half the cheese. Top each side with even amounts of chopped chicken and caramelized onions. Sprinkle on remaining cheese, and pop in oven for 10–15 minutes, or until cheese is melted and bubbly.

Slice in squares and let the munching begin!
