Description

Healthy muffins that taste great! Made these for the health-conscious girls at work, and they loved them!

Ingredients

  • ¾ cups Dark Spelt Flour
  • ½ cups Light Spelt Flour
  • 1-¼ cup Quick Cooking Oats
  • ½ cups Flax Meal
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 1 cup Unsweetened Applesauce
  • ½ cups Buttermilk
  • ½ cups Packed Brown Sugar
  • 2 Tablespoons Coconut Oil
  • 1 whole Large Egg (slightly Beaten)
  • 1 can (14 To 16 Oz. Can) Cherries In Pear Juice, Well Drained And Chopped

Preparation

1. Preheat oven to 375 degrees. Grease or line 18 standard muffin cups.

2. Mix the dry ingredients (flours, oats, flax meal, baking powder, baking soda, salt, cinnamon) in a large bowl.

3. Mix wet ingredients (applesauce, buttermilk, sugar, coconut oil, egg) in a medium bowl.

4. Add applesauce mixture to flour mixture. Stir until just moist.

5. Fold in cherries.

6. Fill muffin cups 2/3 full. Bake for 20 minutes, or until center tests done, turning the pans after 15 minutes.

I love these muffins. I made a couple of substitutions based on what I had on hand which just shows how flexible the recipe is. I used untoased wheat germ in place of the flax meal and I used chopped fresh Bing Cherries in place of the canned cherries. I also added a bit of streusel topping just for fun!
