Description

(aka: “feed me this for breakfast, lunch, and dinner for the rest of my life, and I will be one happy lady”)

Along with a light salad or fresh fruit, this makes a complete meal!

You can use fresh herbs in this too: just double the amounts of the listed dried and substitute fresh instead.

Ingredients

  • 1-¼ cup Flour
  • 1-½ teaspoon Sugar
  • 1 dash Black Pepper
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • 1 Tablespoon Dried Parsley
  • ½ teaspoons Dried Basil
  • ½ teaspoons Thyme
  • ½ teaspoons Dried Oregano
  • ¼ teaspoons Dried Savory Or Majoram
  • ⅓ cups Grated Provolone Or Mozzarella Cheese
  • ⅓ cups Grated Parmesan Cheese
  • 1 whole Egg
  • ⅔ cups Buttermilk
  • 2 Tablespoons Oil
  • ½ cups Pizza Sauce, Optional
  • Additional Mozzarella And Cheddar As Needed
  • ½ pounds Bacon, Cooked And Crumbled

Preparation

In a medium bowl, combine the flour, sugar, pepper, baking powder, baking soda, parsley, basil, thyme, oregano, and savory or marjoram. Add the 1/3 cup of mozzarella and 1/3 cup of parmesan and stir until blended.

In another small bowl, stir together the egg, buttermilk, and oil – then add it to the dry ingredients and stir until well mixed.

Scrape dough into a greased 9 inch cake pan and bake at 325F for 30-35 minutes, or until pale brown.

Spread on pizza sauce, if using, and add handfuls of cheese on top until nicely covered (or generously covered – say, over the top – as I did!) and sprinkle the cooked and crumbled bacon on top of that. Bake for about 10 more minutes, or until the cheese is melted and starting to become bubbly at the edges. Devour warm!!!

Just made this alongside some soup for dinner, and it was superb! I used cheddar and Parmesan, as that’s what I had on hand, and it came out soft, flavorful, and just great. Will definitely make again- thanks!
