Description

These muffins are moist, full of cheese, and have the perfect hint of jalapeno.

Ingredients

  • 1 cup White Or Yellow Corn Meal
  • 1 cup All-purpose Flour
  • ¼ cups Granulated Sugar
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • 1 cup Milk
  • ⅓ cups Vegetable Oil
  • 1  Egg (large)
  • 1-¼ cup Medium Cheddar Cheese, Grated, And Divided
  • 1  Jalapeno, Seeded, And Chopped Finely

Preparation

Preheat oven to 350ºF. Grease a regular size muffin pan.

In a medium bowl, combine all dry ingredients. Mix together, and set aside. In a small bowl combine the milk, oil, and egg. Whisk together. Add wet mixture in with the cornmeal mixture. Stir together until incorporated. Gently fold in 1 cup of grated cheese and chopped jalapeno. Spoon into prepared muffin pan until each is about 2/3 full. Sprinkle each muffin with a little of the remaining 1/4 cup of cheese. Bake for about 15 minutes, or until a toothpick inserted in middle comes out clean. Enjoy!

Mmm! Good idea! I really don’t see a reason why you wouldn’t be able to use Chipoltles. I think that would probably be delicious! Let me know how they turn out! Thanks for the comment!

can you substitute the jalepenos for chipotles? I love their smokiness. Dried ones and the ones in the adobo sauce have yet to buy them fresh. I sause these muffins and figured would check. But I will be trying the recipe as is as well. Thanks for posting!
