Description

Flavourful cheddar and spinach loaf. Great on its own, but completely irresistible when topped with crispy bacon.

Ingredients

  • 300 grams Self-raising Flour (Sifted)
  • 1 pinch Salt
  • 130 grams Cheddar, Grated
  • 150 grams Frozen Spinach, Defrosted And Well Drained
  • 2  Eggs
  • 250 milliliters Milk
  • 2 teaspoons Horseradish

Preparation

1. Preheat oven to 200°C (390ºF) and grease a 25cm (about 9 3/4″) loaf pan.
2. In a large bowl, mix together sifted flour and salt. Mix in cheddar and spinach.
3. In a separate bowl, beat together eggs, milk and horseradish. Pour into flour mixture and mix well.
4. Pour into a loaf pan and bake for 1 hour. If you see the top getting burned before the inside is ready, cover loaf with foil for the remaining time.
5. Allow to cool in pan for about 10 minutes and then transfer to a cooling rack.
