Description

This bread is quick and easy. Great for getting kids to eat their vegetables. Serve for breakfast, snack or dessert!

Ingredients

  • 2 cups All-purpose Flour
  • 1-¼ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Nutmeg
  • ½ teaspoons Salt
  • 1 cup Carrots, Grated
  • ½ cups Unsalted Butter, Softened
  • ¾ cups Light Brown Sugar
  • ¼ cups Granulated Sugar
  • 1  Egg
  • ¼ cups Milk
  • 2 teaspoons Vanilla Extract
  • ¼ cups Honey

Preparation

Preheat oven to 350 F. Spray a 9×5 inch loaf pan with Baker’s Joy (or coating the pan with butter and flour work great too). Set pan aside.

In a medium bowl, whisk together the flour, baking powder and soda, cinnamon, nutmeg and salt. Add the carrots and toss to coat with flour. Set aside.

In a large bowl, mix together the butter and sugars until light and fluffy. Add the egg, milk, vanilla and honey. Mix to combine. Pour the dry ingredients into the wet and mix just until combined. Over-mixing will end with a tough bread.

Pour the batter into the loaf pan. Spread batter evenly. Put pan into the oven. Bake for 1 hour or until a toothpick inserted in the middle comes out clean. Remove from oven and set pan on a rack to cool. Enjoy!
