Description

These carrot and pear mini loaves are super healthy—a great breakfast or snack idea. Whole grain, low fat, low sugar, and easy to make.

Ingredients

  • 1 cup Whole Wheat Flour
  • 1 cup All-purpose Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ½ teaspoons Ginger
  • ½ teaspoons Nutmeg
  • 3 whole Ripe Pears, Cored
  • 3 whole Medium Carrots (about 1 Cup Grated)
  • ⅓ cups Plain Greek Yogurt
  • ⅓ cups Lightly Packed Brown Sugar
  • 1 whole Large Egg

Preparation

Preheat oven to 400ºF. Lightly spray a mini loaf pan with nonstick cooking spray and set aside.

In a large bowl, whisk together whole wheat flour, all-purpose flour, baking powder, salt, cinnamon, ginger and nutmeg. Set aside.

In the bowl of a food processor, combine pears, carrots, brown sugar, yogurt and egg. Process until well combined. Alternatively, you can finely grate the pears and carrots and mix together with the rest of the wet ingredients in a bowl.

Add wet ingredients to dry and stir until just combined. Don’t over-mix. Divide batter into prepared mini loaf pan. Bake for 25–28 minutes or until a toothpick inserted in the center comes out clean. If you’re making muffins instead, it will likely take a little less time.
