Description

Given to me by my aunt, this recipe makes fluffy, gorgeous muffins that are great for breakfast or with coffee/tea.

Ingredients

  • 1-½ cup All-purpose Flour
  • ½ cups Cake Flour
  • ½ cups Granulated Sugar
  • ¼ cups Brown Sugar
  • 2-½ teaspoons Baking Powder
  • 1 teaspoon Cinnamon
  • ½ teaspoons Salt
  • 1-½ Tablespoon Instant Coffee Granules (add A Little More For More Coffee Flavor)
  • 1 cup Milk
  • 1 Tablespoon Cocoa Powder (optional)
  • ½ cups Butter Or Margarine, Melted
  • 1 whole Egg, Beaten
  • 1 teaspoon Vanilla Extract
  • 4 Tablespoons Shortening
  • ¾ cups Semi-sweet Chocolate Chips, Roughly Chopped

Preparation

Preheat oven to 375 degrees F. Spray a 12-count muffin pan with non-stick cooking spray.

In a bowl, combine the first 7 ingredients (flours, sugars, baking powder, cinnamon and salt) and set aside.

In a large mixing bowl combine the instant coffee and milk. Mix in the cocoa powder (if using). Add the melted butter/margarine, egg and vanilla into the coffee mix. Add in shortening and blend a little with an electric hand mixer. Gradually add in the dry ingredient mixture, mixing with the hand mixer until smooth. Fold in chopped chocolate chips (or mini-chocolate chips, if you have them).

Spoon the batter into the muffin pan until evenly distributed. Bake at 375 degrees F for about 17 minutes or until the muffins are springy to the touch. Allow to cool slightly for 5-10 minutes. Then serve warm and enjoy!
