Description

The following is a good basic buttermilk scone recipe to which I add chopped dried apricots or raisins (or a combination), plus chopped walnuts.

Ingredients

  • 2 cups Flour
  • ⅓ cups Sugar
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 6 Tablespoons Chilled, Unsalted Butter
  • 1 cup Dried Apricots/raisins
  • ⅓ cups Chopped Walnuts
  • ⅔ cups Buttermilk
  • 2 whole Eggs
  • 1-½ teaspoon Vanilla

Preparation

1. Preheat oven to 350F.

2. Grease a large cookie sheet.

3. Mix the first 5 ingredients in a large bowl (flour, sugar, baking powder, baking soda, salt).

4. Add butter and rub with fingertips until mixture resembles fine meal.

5. Add the apricots and/or raisins and walnuts to the flour mixture.

6. Whisk buttermilk, eggs and vanilla in a medium bowl to blend.

7. Gradually add egg mixture to the flour and stir until moist clumps form.

8. Turn out dough onto a lightly floured surface.

9. Knead 4 times to blend.

10. Transfer dough to prepared cookie sheet.

11. Press dough into an 8″ round.

12. Using a small sharp knife, score dough into 8 wedges.

13. Bake until golden brown and a tester inserted into the center comes out clean, about 25 minutes.

Delicious! I made these scones with dates,coconut and almonds instead of the walnuts and apricots since that is what I had on hand. The mixture was a little too sticky/wet to knead so I skipped steps 8 and 9. Instead I mixed lightly until just combined, then scooped out about a half cup of batter for each scone onto parchment paper covered baking sheet. Perfect!
