Description

A hint of blueberries add sweetness to a classic: Zucchini Bread.

Ingredients

  • 3 whole Eggs
  • 1 cup Vegetable Oil
  • 2 teaspoons Vanilla Extract
  • 1 cup White Sugar
  • 2 cups Shredded Zucchini
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Baking Soda
  • 2 Tablespoons Cinnamon And Sugar
  • ¼ cups Honey
  • ¼ cups Milk, Skim
  • 1 cup Fresh Blueberries (Frozen Works, Too)

Preparation

Preheat oven to 350ºF.

Throw everything, except the blueberries, together in a mixer and mix until the lumps have evened out. Then add the blueberries and mix again for a stir or two, taking care that the blueberries don’t end up making the mix purple.

Spoon into a greased large loaf pan or into 4 mini-loaf pans.

Bake for 50-55 minutes.

I don’t have any honey and can’t get to the store, do you think this will work without the honey? Is there something I can use in place of the honey?
