Description

I grew up eating box mix blueberry muffins, until I came across this wonderful recipe. They are delicious hot or cold. A tradition we have is to make them a day before heading out on a vacation. We have them for breakfast and also to munch on later in the day!

Ingredients

  • 3 cups Flour
  • ½ cups Brown Sugar
  • ½ cups Sugar
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • ½ cups Butter, Melted
  • 3 whole Large Eggs
  • 1 cup Milk
  • 1-½ cup Blueberries, Fresh Or Frozen

Preparation

1. Mix flour, sugars, baking powder and salt in a bowl.
2. Combine melted butter, eggs and milk and stir by hand into dry ingredients until just blended.
3. Fold in berries lightly and carefully.
4. Spoon into greased muffin tins. Bake in a preheated 400-degree oven for 2o minutes or until golden brown.

Makes 12 extra large muffins. You can get about 18 muffins if you put less in each cup.

Oh, bummer… not so good. Maybe I did something wrong, but the batter was reallyheavy. My husband and I decided that they had the texture of scones and needed to be sweeter. Will keep plugging away for another blueberry recipe.

These are absolutely wonderful. They went together quick and easy and taste perfect. The kids loved them too. The 4 of us managed to clean them out in 2 days and the only reason it took 2 days is because I hid some in the freezer. I made some in the large muffin tin and some in the regular size.

I loved the texture of these muffins, dense and moist. The butter and brown sugar is a great combination. Mine were a little salty, but my fault because I used salted butter plus the salt in the recipe – maybe only 1/2 teaspoon next time. My blueberries were not very sweet, so I’d probably add a bit more sugar as well. But overall, a great recipe!

These were delicious. I love the taste of the fresh blueberries which I bought local from Walmart of all places. I also loved how easy they were to make. I made about 18 but they vary in size. Next one I eat I’m going to add butter to. Thanks for posting!

I made these blueberry muffins last night and what a wonderful treat. The muffins are just sweet enough and dense enough – and it’s such an easy quick recipe to make. I’m planning a road trip tomorrow and these will be the perfect portable breakfast. I think I’ll freeze some and take them to the campers too – if there’s any left! I may try them with a little oatmeal in the batter next time.
