Description

Instead of blueberry muffins, try these amazing baked blueberry donuts!

Ingredients

  • FOR THE DONUTS:
  • 2-¼ cups All-purpose Flour
  • 1-¼ cup Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 pinch Nutmeg
  • 1 cup Cream
  • 2  Eggs
  • 1 Tablespoon Vanilla
  • 3 Tablespoons Melted Butter
  • 1 cup Fresh Blueberries
  • FOR THE GLAZE:
  • 1 cup Powdered Sugar
  • ¼ cups Cream
  • 1 teaspoon Vanilla Bean Paste (you Could Also Use Vanilla Extract)
  • 1 Tablespoon Hot Water

Preparation

Preheat the oven to 350 F. Grease a donut pan really well with cooking spray. Recipe makes about 18 donuts.

In a large bowl combine all of the dry donut ingredients (flour through nutmeg). Set aside.

In a separate bowl, whisk together the cream, eggs and vanilla until smooth.

Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir together and then add the melted butter into the batter. Stir the batter and mix it really well until smooth.

Fold the blueberries into the batter.

Spoon the batter into the donut pan. Bake at 350 F for 10-12 minutes or until golden on top.

Then remove from the oven and let them cool for a few minutes before gently turning them out onto a cooling rack.

While the donuts are baking, make the glaze:

Combine all of the glaze ingredients in a small bowl and whisk together until smooth.

Drizzle the glaze over the top of the donuts when they have cooled.
