Description

Perfect for lazy summer mornings!

Ingredients

  • 2 cups All-purpose Flour
  • 1 cup Whole Wheat Flour
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • ⅓ cups Sugar
  • 1 teaspoon Ground Cinnamon
  • ½ cups Butter
  • 1 cup Blueberries
  • 1 whole Egg
  • 1 cup Buttermilk
  • 1 Tablespoon Natural (or Regular) Sugar

Preparation

Preheat oven to 375 degrees. In a mixing bowl, combine flours, baking powder, baking soda, sugar and cinnamon. Cut in butter with a fork. Add blueberries. In a separate bowl, beat egg and buttermilk together and gently fold into flour and blueberry mixture, just until it starts to combine. Mixture will be crumbly.

Pour onto a cutting board or other surface and gently knead together. Divide in half and gently pat into two circles. Cut into wedges and place on a greased or lined baking sheet. Sprinkle with sugar and bake for 25-30 minutes or until lightly browned.

I left my review but just wanted to comment that I didn’t quite have enough blueberries so I filled the rest of the cup up with diced strawberries. They were yummy!

These made a great Sunday morning breakfast. I had a little trouble getting the dough to come together though. It was so dry that it just didn’t want to form a kneadable ball. Tasty though.

Made these and they were good! I had some left over buttermilk and didn’t know what to do with it, so found this recipe. It’s quick and easy. Would make these again!

Super easy to make. My kids kinda liked them, but that isn’t saying much since they are picky eaters. They didn’t like that there was fruit in it. They wanted it plain. However my husband and I LOVED it and didn’t mind eating all the scones ourselves ;)

I invited my mom, sister and aunt over for tea very last minute. I was able to make these in less than an hour and they were just coming out of the oven when my company arrived. They tasted delicious and my aunt (who is a baker for a bakery) wanted to take home the recipe! yummy!!
