Description

Not just another banana bread recipe. Made with oat flour, and loaded with blueberries and walnuts, this bread is a shining star.

Ingredients

  • 1 cup Oat Flour
  • 1 cup White Whole Wheat Pastry Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Sea Salt
  • ⅓ cups Nonfat Vanilla Yogurt
  • 1 teaspoon Vanilla
  • ½ cups Brown Sugar
  • 2 teaspoons Sugar
  • 1 whole Egg
  • 3 whole Ripe Bananas, Smashed
  • 1-½ cup Blueberries
  • ½ cups Walnuts, Chopped
  • Oats For Sprinkling

Preparation

Preheat oven to 350ºF. Spray a 9×5 loaf pan with cooking spray.

Combine oat flour, flour, baking powder, baking soda, and salt.

In a large mixture add yogurt, vanilla, brown sugar, sugar, and egg. Mix about 3 minutes until smooth.

Add in smashed bananas. Combine well.

Add in dry ingredients and mix until just moistened. Gently fold in blueberries and walnuts.

Pour into baking pan and sprinkle top with oats.

Bake 1 hour or until toothpick inserted comes out clean.

Note: If you don’t have oat flour, simple add oats to a food processor and blend until it achieves a flour-like consistency.
