Blue cheese and bacon are one of my favorite combinations. I love them on salad and have put them in beer bread. Since we are featuring picnic items in June and I love taking corn muffins to a picnic, I thought I’d tweak some ready-mix muffins with these two yummy items. Here’s my quick version or you can add blue cheese and bacon to one of your own favorite cornbread recipes.
Mix all ingredients well. Line a muffin pan with 12 muffin liners. Bake at 350ºF for 18-20 minutes.
