Description

Tangy and tart scrumptious Lemon Bread!

Ingredients

  • ⅓ cups Melted Butter
  • 1-¼ cup Sugar
  • ½ cups Milk (whole, 2%, Skim, Plain Soy)
  • 2 whole Eggs
  • ¼ teaspoons Almond Extract
  • ¼ teaspoons Lemon Extract
  • 1-¼ cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 1 Tablespoon Grated Lemon Zest
  • ½ cups Pecans Or Walnuts, Finely Chopped
  • 3 Tablespoons Lemon Juice

Preparation

Mix together butter and 1 cup of sugar. Add milk and eggs and mix well by hand. Add extracts and mix.

Sift the rest of the dry ingredients (except for the remaining 1/4 cup of sugar) together in a separate bowl. Add milk/egg mixture to dry ingredients and mix thoroughly. Fold in nuts and zest.

Spray 10″x5″ loaf pan with Bakers Joy OR butter and then flour the pan. Pour batter into pan and bake at 325 degrees for 70 minutes OR 350 for 45-50 minutes, until toothpick comes out clean when inserted in middle of loaf.

Mix Lemon juice and remaining 1/4 cup sugar together until sugar is dissolved. Spoon over warm bread while still in pan. Let sit for 15 minutes then remove from pan.

Let your bread soak up all that lemony goodness for YES – 24 hours – then cut and ENJOY!
